Recipes - Walnut Pesto

Walnut Pesto


  • 1 head elephant garlic
  • 1 cup Omega Excellence Organic Cold Pressed Walnut Oil
  • 2 tbsp olive oil
  • 1⁄2 cup fresh basil leaves
  • 1⁄4 cup fresh parsley leaves
  • 11⁄2 cups walnuts
  • 1 cup pine nuts



  1. Preheat the oven to 190°C/Gas Mark 5.
  2. In a covered, oiled casserole dish, bake the garlic for 40 minutes, basting occasionally with the olive oil. Let the garlic cool and then peel.
  3. Blend the basil, parsley, garlic, walnuts and pine nuts in a blender.
  4. Add the walnut oil and blend until smooth.
