Recipes - Seared scallops and Papaya salsa

  • 2tbsp Omega Excellence Cold Pressed Walnut Oil
  • 1tbsp Omega Excellence Apple Cider Vinegar
  • 1 small papaya - peeled, pips removed and chopped
  • 1 red pepper, chopped
  • 1/2 green chilli, seeded and minced
  • 1/2 red onion, chopped
  • 2tbsp fresh lime juice
  • A handful chopped fresh coriander
  • 1tsp salt
  • 2tbsp plain flour
  • Freshly ground black pepper
  • 1tbsp olive oil
  • 500g sea scallops


  1. In a medium bowl, combine the papaya, red pepper, chilli, onion, lime juice, vinegar, walnut oil, coriander and 1/2 teaspoon salt. Set aside.
  2. In a large sandwich bag, combine the flour, black pepper and remaining 1/2 teaspoon salt. Add the scallops and shake to coat.
  3. In a large frying pan, heat the olive oil over a medium heat. Add the scallops and sear for 2 to 3 minutes on each side, being careful not to overcook. Serve the scallops over the papaya salsa.
