Recipes - Pumpkin Soup

Pumpkin Soup


  • 1 red onion
  • 2 cloves of garlic
  • 3 flat tbsp Omega Excellence Coconut Butter 
  • 1.5kg pumpkin
  • 2 bay leaves
  • 300ml milk
  • 300ml single cream
  • Sea salt and black pepper
  • Omega Excellence Pumpkin Seed Butter


  1. Melt the coconut butter in a frying pan. Chop the onion, crush the garlic and sauté.
  2. Peel the pumpkin, cut into small pieces and add to the onion mixture along with the bay leaves, salt and pepper. Cover and cook for 15 minutes until the pumpkin is soft.
  3. In a food processor, blend the mixture together with the milk until smooth. Stir in the cream and reheat gently.
  4. Pour into bowls and top with a teaspoon of pumpkin seed butter.
