Beetroot is a sweet, earthy-tasting root vegetable, rich in indigo plant pigments called ‘anthocyanidins’. These pigments have potent antioxidant properties and are known to inhibit oxidation (rancidity) of fragile fats. Beetroot also provides antioxidant vitamins A, C and E and minerals, especially iron and selenium. It helps support healthy red blood cells, and supports the liver in breaking down stored fats. Beetroot also gives natural colour to food and drink.
